Peppered Pork Medallions in Tangy Mushroom Sauce



These were very good! Tender, juicy and good flavor! They were also very quick to prepare. Once the meat is cut up and put into the pan, it cooks very fast!

Asian Turkey Lettuce Wraps


These turned out really well! Very filling and flavorful!

Here is the recipe I used for inspiration:

And here are my changes:

I used ground turkey instead of ground beef
I added about a cup of shredded carrots

I omitted:

the onion, pickled ginger, pepper sauce, water chestnuts and green onions

Even without all of these ingredients, they turned out amazing!
I'm guessing that with my changes, they are very low-calorie as well :) Bonus!

Fiber One® Crunchy Fudge Cookies



I made these for the ladies in my weight loss class and everyone seemed to really like them. The title calls them crunchy but I thought they were way more chewy than crunchy. They still have sugar from the brownie mix but far less fat than most chocolate cookies. Also, they have plenty of fiber from the Fiber One cereal in them. So that's a bonus because I, along with most people, don't get enough fiber usually.
I thought they were a really nice alternative to fat-filled desserts that still satisfies your chocolate cravings!

Spinach/Tomato/Mushroom "pizza"


I sort of made this one up last week and it turned out pretty good, I thought. I bought these new Flatout breads at Target. Check out the nutrition info on these! Pretty darn healthy! And they are actually pretty tasty too.


So I toasted one of these in the oven by itself for like 3 minutes on 425. Then added a couple teaspoons of store-bought pesto. Then topped it with fresh spinach, halved grape tomatoes, fresh mushrooms and fat-free feta, parmesan and a drizzle of olive oil. Put it all back in the oven for about 6 minutes on 425. It was delicious and very filling!

5 Ingredient Tortellini Soup!!


I got this recipe from the Rachael Ray Show and I loved it! I did add one ingredient to the recipe and that was fresh mushrooms. It was very good! So technically, that made it 6 ingredients. Very simple though :) Definitely a good one for when you don't feel like cooking but want something relatively healthy. It's a keeper for me! Hope you all will give it a whirl and let me know your thoughts :)
