Banana/Blueberry Smoothie

I threw this smoothie together the other day and Chris and I both loved it! This is a great way to get your fruit and milk servings in. These measurements are approximate, just FYI. Just make yours according to your preferences on thickness.

3/4 cup frozen blueberries
1 banana, broken into chunks
6oz. nonfat lemon yogurt
1 tablespoon honey
1/3 cup skim milk

Combine all ingredients in blender and puree for about 1 minute.
This makes enough for two 12 ounce glasses.

Raspberry Angel Food Cake


This is a really simple way to change up plain old angel food cake. You make it according to package directions, but at the end you mix in a dry package of sugar-free raspberry Jell-O. Or really any flavor of Jell-O you would like. We really liked this and had it with Lite Cool Whip and fruit. Great dessert!

Easy-on-the-Waistline Oven-Fried Chicken


I've made this a couple times before and we're going to have it again tonight since it is so flavorful and easy!
I always use dijon mustard (not yellow) and it is delicious!
Panko breadcrumbs give the best crunch, but any kind will do. I also add some parmesan cheese to the breadcrumb mixture.

**One very good tip that I received from watching Rachael Ray was to put the chicken on top of a cooling rack that is on top of a cookie sheet and line the cookie sheet with foil. Also, spray the cooling rack with Pam as well as the top of the chicken. This allows the heat to get all the way around the chicken and also helps it to not be soggy underneath.

Cheddar Broccoli Frittata

I decided to make a really simple "dinner" tonight and this is what I chose. Very easy and pretty tasty too!
I didn't have all of the veggies listed, but next time I will be adding the mushrooms! Of course, I omitted the onion, as usual. I only had yellow squash (for a change) instead of zucchini. So I used that. It was delicious!

Turkey Stroganoff

I made this tonight and it was a very easy, quick dinner to throw together. Definitely good when you are pressed for time or have little energy to cook. Of course, in my case, tonight I was just being lazy! haha!

Here are my tweaks:
I added about 1 1/2 cups of fresh, sliced mushrooms
Changed the 1/2 cup of water to skim milk
Omitted the onion

Lemon Chicken Piccata

Just had this tonight for dinner and Chris and I both really enjoyed this!
I substituted olive oil for the butter. But that was probably the only change I made. It's pretty healthy otherwise. This is very flavorful and I'll be making this again for sure.

Honey Pecan Pork Chops

These are so easy and the perfect recipe if you are cooking for two. I bought a package with just two pork chops at Target and just halved the recipe for Chris and myself. But this could easily be doubled or tripled for a bigger family. I just started using a gluten-free flour because Chris is on the SCD diet due to his digestive issues. Here's the original recipe though:

Rosemary Ranch Chicken Kabobs

This is such an easy marinade! And definitely a keeper in my book! We really enjoyed these.

3-4 boneless, skinless chicken breasts, cut into 1 inch squares
2-3 skewers
1/2 packet dry Ranch dressing mix
1/3 cup olive oil
2-3 tablespoons Worcestershire sauce
1 teaspoon white vinegar
1 teaspoon honey
1/4 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon rosemary

Let cubed chicken marinate in fridge for 1-4 hours, at most. Put chicken on skewers. Try to leave a little space between them as they might not cook all the way through. Grill on each side 5-7 minutes.

Tomato Basil Pasta Primavera

Tonight's dinner was sort of a fusion of two recipes. Here is the first:

Here's what I did:

1 lb. whole-grain penne pasta
1 pint grape tomatoes, halved
1 zucchini, chopped
1 bunch of fresh asparagus
1/2 bag frozen sugar snap peas
(feel free to add any other veggies you like to this)

Cook pasta according to instructions. Meanwhile, chop veggies and put all but the tomatoes into an inch of boiling water in a large skillet. Cook for 7-8 minutes. Drain and add to cooked pasta.
Toss to coat about 1/4 cup olive oil, 1 teaspoon garlic salt, 1/2 teaspoon onion powder, large handful of chopped, fresh basil, 1/2 cup grated parmesan cheese and 4 tablespoons lemon juice.

This is so good and I didn't miss the meat at all. The pasta is very filling and I have tons of leftovers for the weekend!

Mediterranean Chicken with Rosemary Orzo

We just had this for dinner tonight. It was definitely a healthy and filling meal. Not a ton of flavor, but you could add many things to it to change that. Definitely a great option for a quick, healthy meal though!

Here are my changes:
I omitted the bell pepper (it doesn't agree with Chris)
I used couscous instead of orzo because Target didn't carry it.

Garlic Lime Fish Tacos

This was sort of a hybrid recipe. I saw this one and thought it looked good, but I knew I couldn't make it with the biscuits due to fat content.

So here's what I did:
Tossed two tilapia fillets in 3 tablespoons lime juice and 1/2 teaspoon chopped garlic, pinch of salt and pepper. Let it set for 5-10 minutes.

In skillet, heat 2 tablespoons olive oil over medium-high heat. Cook fish 4-5 minutes per side.

In a small bowl, combine 3-4 ounces plain Greek yogurt and 1/2 teaspoon of each of these seasonings: cumin, coriander, chili powder, onion powder, salt. Mix well.

I served the tacos on whole-wheat tortillas with shredded carrots and cheese on top along with a dollop of the yogurt sauce. Yummy!
