Chicken and Bean Tortilla Soup


I made this the other night and I basically just threw it together with what I had in the pantry.

1/2 cup verde salsa
1 - 32 oz. box chicken broth
3 whole boneless chicken breasts
1 can black beans, undrained
2 cans cannellini beans, undrained
1 can diced tomatoes, undrained
1 packet taco seasoning

Let these ingredients cook for about 4 hours on high in your crockpot (or on low in mine since it is so hot!) During the last hour or so, add about 1 1/2 cups of frozen corn. Take out chicken breasts, shred and return to crockpot. Garnish with low-fat sour cream and shredded cheddar, if desired. Enjoy!
