Made this tonight as a side dish and really enjoyed it! Roasting the cauliflower definitely gives it a nice flavor and it was very tender when I removed it from the oven.
The next time I make this, the only thing I would do differently would be to put foil down on the cookie sheet before roasting as it was pretty messy afterward. But the flavor of this dish was great!
